Quiche with Homemade Crust

One of the breakfast dishes I’ve wanted to make at home is a quiche but I won’t be the one eating it. The overall flavor of eggs by themselves is not my favorite thing and never really has been. So this quiche was made for Mike and he developed the flavors of it with bacon, spinach, green onions, eggs, milk, and some seasonings. But I made the crust and the crust is a very simple recipe using olive oil and no butter. The crust is flaky and so easy to make. I found the recipe on Food.com, give it a try!

Crochet Mama and Baby Manatee

I recently tried crochet stuffed animals for a friend who’s expecting in August. I know one of the popular homemade gifts at a baby shower is a crochet or knit blanket so I wanted to stick with homemade but go a different route. I thought about asking my friend what her favorite animal is but once I saw the pattern for a mama and baby manatee it was decided. It did take me three tries to get the pattern started right but from then on it was so simple! This was definitely one of my favorite crochet projects. :)

Lentil Soup

Last week Mike and I made lentil soup and it was one of our favorites as of now! One of my favorite things to do is make a big pot of soup on Sunday’s and enjoy it for the rest of the week. Now that I have Sunday’s off it’s easy to start making soup and then finish the evening with a delicious dinner. The lentil soup is hearty and full of vegetables without any cream. There’s carrots, celery, onion, kale, lentils and sweet potatoes. It won’t leave you hungry but it will make you excited for your next bowl! The soup recipe is in Amanda Freitag’s cookbook, The Chef Next Door, are you surprised? We froze half the soup to thaw for another week when we can get excited for the soup all over again!

Chicken Pot Pie

This past week I was in the mood to make chicken pot pie. The number of times I’ve had chicken pot pie is probably less than 10 but the thought of pot pie was 100% comforting for the cold and snowy weather we had Sunday. And then the snow melted Monday. :( I’ve been ready for snow, simply because a week ago it rained all day and was not as pretty as thick fluffy snowflakes.

The recipe I used is from one of my two favorite cookbooks, Curtis Stone’s What’s for Dinner. Curtis adds turnips and parsnips to the typical pot pie mixture. I had planned to use a sheet of frozen puff pastry left over from before but it was too old and partially dry. I used a pie crust recipe from Sally’s Baking Addiction and was lucky enough to have the right amount of flour for the crust! How ironic that I was making homemade pot pie with pre-made crust and then end up making homemade crust??!

We decided to cook the pie in our fiesta ware casserole dishes, I love all of our fiesta ware because it is oven safe! I’ve reheated frozen oatmeal in the bowls and it works perfectly. The pie crust was delicious, a nice salty, crunchy texture to go with the warm soupy inside. YUM!

Happy Thanksgiving!!

Hopefully you had a wonderful Thanksgiving!! Ours was great and we enjoyed cooking Thursday.

This was our menu: smoked and roasted turkey breast, homemade stuffing, roasted cauliflower, carrots, and Brussels sprout salad. Dessert was a homemade chocolate pudding pie.

Homemade pudding and homemade whipped cream were firsts for me and both were so simple to make! I’m amazed with how easy it is to make homemade whipped cream. Mike and I loved this pie and I would make it over and over again! The recipe is from one of my favorite blogs, Sally’s Baking Addiction. No pumpkin pie for this girl! ;)
