When we received our latest CSA box last week I knew I wanted to make gazpacho. I had a Pilates client give me banana peppers, tomatoes, and a green pepper from her garden the day we picked up our box. From the box I used more tomatoes, cucumber, and zucchini; then added garlic, red onion, vinegar, and tomato sauce.
This was our first time making gazpacho and it is delicious! We used Ina Garten’s recipe and this week I found out she’s coming to Milwaukee in March (so excited and so want to go!). Today is on the chillier side and we had rain this morning so I was craving some grilled cheese and it was amazing with the gazpacho. I’ve tried gazpacho before and didn’t like it and I believe it’s because the veggies didn’t have a chance to shine. That’s not the case with this recipe, veggie and tomato lovers rejoice!
