This week I had an idea to make broccoli cheese and potato soup. I used to work at Panera Bread and I know one of the items ordered the most often was their broccoli cheese soup in a bread bowl. Have you seen how many calories are in that combination?! If you haven’t, you don’t want to know. I chose to make Skinnytaste’s version of this delicious soup and it’s a winner! We had some leftover half and half at home so I used that instead of the milk in the recipe which I know makes it less healthy but at least this way we didn’t waste the half and half. We also saved a rind from our parmesan cheese recently and I used that in the soup. The inspiration for the soup came from the leftover farmer’s cheese I used in the pierogi recipe which I swapped for the American cheese. I know I made 3 modifications to the recipe but it all worked out really well!
I made the soup on Thursday and it’s Saturday evening and there is none left! Yum!!!
