With Lent starting this week I thought it was a perfect time to try making my own pierogies for the first time. Ambitious, I know, but totally worth it! I grew up having pierogies with kielbasa and baked beans (no baked beans for me now, I choose other sides) and I would dip mine in ketchup instead of sour cream (still true). My favorite kind are the potato and cheese so that’s what I decided to make.
The recipe I chose is from one of my favorite blogs, Brown Eyed Baker, a blogger in Pittsburgh (oh how I miss Pirates baseball and Pierogi races). The process is a bit time consuming but less than baklava (haha). I may have ruined Mike and I’s taste for Mrs. T’s pierogies forever but for now I’m just going to enjoy these scrumptious leftovers.
