How was your weekend? Who are you rooting for to win the Super Bowl? At this point, I’m indifferent but I am Very Happy that Green Bay lost to the Seahawks. :) I may still hold a grudge against them after they beat us in the Super Bowl recently but also I want to maintain the status of the most Super Bowl rings. I remember Aaron Rogers telling everyone to RELAX at the beginning of the season when they weren’t playing well, well guess what? The Packers will be doing a lot of relaxing starting today!
Anyways, did you try or do anything new this weekend? We did! We tried some new recipes and they turned out tasty enough for me to share with you. The first new recipe was copycat P.F. Chang Lettuce Wraps from Iowa Girl Eats. I’ve never been to P.F. Chang’s and I’ve never had lettuce wraps but I wanted to give these a try and Mike was on board! These wraps are super quick to make- less than 30 minutes – and they’re healthy and delicious. Give them a try! You won’t be disappointed.
The second new recipe we tried were Pork Carnitas Tacos. I wanted to make something with the slow cooker and this dish was perfect. We just let the pork cook and become tender and scrumptious. We topped ours with Mexican cheese, broccoli carrot coleslaw, and avocado (well avocado for Mike).
For the pork create a dry rub that includes: chile powder, smoked paprika, cumin, salt, pepper, and onion powder. Then take a pork shoulder (ours was a hefty 4.5 pounder) and rub it with canola oil and then put the rub all over. Next sear all sides on the stove in a pan at medium high heat. Fill the slow cooker with half of the carnitas marinade (liquid) bought at our local grocery store and a can of chicken broth. Once the meat is browned place it in the slow cooker and the remaining liquid. Cook on high for 5 hours or low for 6 to 8 hours.
