P&P: Pepperoni Rolls and Pumpkins

Happy (early) Halloween! Mike and I finally carved our pumpkins for Halloween last night. Yesterday was the first day I started to feel 100% better from the nasty stomach virus. I’m still going to bed early but now I’m able to eat breakfast before work like I normally do and drank my first cup of coffee in over a week! It’s been interesting the past two weeks, that’s for sure.

But anyways, pumpkin carving was great! After a last minute trip to buy tea lights, our pumpkins were ready for their debut! Here is Mike’s design:

Next thing on our to do list was making pepperoni rolls for my work potluck this week. I love pepperoni rolls. They’re fantastic and they are easy.

To make them all you need is:
Pizza dough (pre-made & refrigerated)
Pizza sauce (can be made without sauce- up to you!)
Mozzarella cheese

That’s it! To make the rolls you roll out the dough- I rolled mine thinner than how the dough normally is to get more servings out of the roll. Next you add a thin layer of sauce (or you skip this step), then add pepperoni, and then the cheese! Roll up the dough tightly lengthwise and pinch the ends in. Place the dough seam side down on a baking sheet lined with parchment paper. Drizzle the top with some olive oil to get a nice brown top and bake in the oven at 400 degrees for about 15-20 minutes. I checked mine at 15 minutes to make sure it wasn’t burning and then kept an eye on it after that.

See? Easy! The great thing is you can do this with whatever toppings you want!
