Orecchiette with Spicy Sausage and Broccolini

Happy Friday!

How was your week? Are you ready for the weekend? I’m excited for tomorrow because Mike and I are going to see my alma mater, Kent State, play Northern Illinois. Hopefully it’s a good game and Kent State leaves with a win. It’ll be tough, Kent hasn’t won in Illinois since about 1999! But Go Flashes!

Today I’m sharing one of our favorite go-to dishes to make when we want leftovers after and that we both enjoy: Orecchiette with Spicy Sausage and Broccolini. This is our own version of Mario Batali’s Orecchiette with Broccoli Rabe. I’m not a huge fan of broccoli rabe, it’s a bit too bitter for me, but broccolini works great in this dish. We’ve also made it with spinach and broccoli but this version is our favorite. Also, Mario makes his own pasta but we didn’t make our own.

Orecchiette Spicy Sausage and Broccolini

Orecchiette with Spicy Sausage and Broccolini

1 bag of orecchiette pasta
Johnsonville Hot Italian Sausage, casings removed (this is our preference but any spicy sausage will do)
Olive Oil
Red pepper flakes
Parmesan cheese

You can follow Mario’s recipe here but start at step 4 if you’re not making your own pasta. We add garlic to ours and make sure to boil the pasta for one minute less than the package directions. I love how there isn’t much sauce to this pasta but it’s still filling and delicious. The water from the boiling pasta mixed with the olive oil makes a sauce and incorporates everything together.
