How’s it going? How was your weekend? We had a pretty great weekend, spending some time at Bastille Days and one of our new favorite restaurants, Louise’s.
Also we went to the local farmers market and purchased some delicious zucchini. I decided to make some zucchini bread, which is only slightly healthy, but 100% fantastic. I promise you won’t be disappointed! The recipe makes two loaves, I freeze one and eat the other one (not in one day). I don’t remember where I found this recipe but it’s a keeper!
2 cups shredded zucchini
1-1/2 c granulated sugar
1/2 c vegetable oil
1/2 c unsweetened applesauce
2 tsp vanilla
2 c flour
1/4 tsp baking powder
2 tsp baking soda
2 tsp cinnamon
1 tsp salt
1. Strain any excess water from zucchini. Preheat oven to 350 degrees F.
2. In a large bowl, beat eggs, sugar, oil, vanilla, and applesauce together.
3. In a second, medium sized bowl, mix flour, baking powder, baking soda, cinnamon, and salt. Add flour mixture to wet ingredients. Fold in zucchini until mixed well.
4. Pour into 2 greased loaf pans. Bake for 45 minutes to an hour or until a toothpick inserted comes out clean. Enjoy!
