Last weekend I wanted to make breakfast with what I already had on hand in my kitchen and the result was cornmeal pancakes! I used Pioneer Woman’s cornmeal pancake recipe and after starting the pancakes I realized the batch was large enough to feed an army. She always makes such a large amount of food because her family has huge appetites after working on their farm. Not to worry though- I froze half of the batch to enjoy at a later time.
To go with the pancakes I used a bag of frozen whole strawberries to make a lemon strawberry sauce- I had all of these ingredients on hand too! I added the zest of one lemon, the juice of half the lemon, and one tablespoon of raw sugar to the saucepan of strawberries. I let this simmer on the stove and then mashed up the strawberries.
The result? Delicious!
