Happy Mother’s Day to all the moms out there! I hope you had a fantastic and relaxing day.
Many places advertise Sunday brunch as the place to go for Mother’s Day and that’s a great idea. Such a great idea that Mike and I decided to have brunch at home to avoid any crowds. Some of our favorite places may not have been too busy but we enjoyed cooking our own breakfasts this morning.
For the gentlemen the menu was savory, a bacon and spinach skillet popover that was slightly less of a popover but still delicious. Mike adapted Bobby Flay’s Asparagus and Cheese Popover recipe.
For the ladies the menu was sweet, Orange Ricotta Chocolate Chip Pancakes from Two Peas & Their Pod blog. I enjoyed how the egg whites and ricotta made these pancakes light and fluffy.
