Did you watch the closing ceremonies of the Olympics? I thought the fifth Olympic ring not opening in the closing ceremonies was humorous. Only two more years and then it’s time for the Summer Olympics!
Today I just had to share with you the recipe we tried this weekend: Pasta with Scallops and White Wine Tomato Sauce from the Skinnytaste blog.
This dish turned out fantastic! Mike and I have wanted to cook scallops ourselves ever since I tried scallops for the first time and loved them. I love all things seafood so this dish is right up my alley. I was a little hesitant about using white wine because I’ve had white wine dishes fail in the past but we researched what wine to pair with scallops and chose a Sauvignon Blanc. I will make this dish again!
Tonight I added spinach with the leftovers. I sauteed the spinach with some olive oil, salt, and pepper.
