Cherry Orange Muffins

Happy New Year!

I can’t believe another year has come and gone! I’m excited for new adventures in 2014 for myself and me and Mike. What do you hope to accomplish in 2014? Have you made any new year’s resolutions?

I have a new recipe for you today: Cherry Orange Muffins. This recipe was originally supposed to be cranberry orange muffins but when Mike went to the store he purchase dried cherries instead of cranberries and a blood orange instead of a navel orange. That’s ok because they turned out delicious! No need to try out the original recipe because these are the best muffins we’ve made to date. Sometimes mistakes have a way of working out! I highly recommend using a blood orange rather than a navel orange because we’ve done both and the blood orange is better.

So make a batch of these muffins, sit back, and cuddle up on the couch with a blanket because it’s cold outside!

Cherry Orange Muffins

2 c all purpose flour
1 c sugar, 1 tbsp set aside
1 1/2 tsp baking powder
1 tsp salt
1/2 tsp baking soda
Zest of one blood orange
Juice of one blood orange
3 tbsp milk
1/4 c canola oil
1 large egg, lightly beaten
2 c dried cherries (Craisins brand)
1/3 c chopped walnuts

1. Preheat oven to 400 degrees F.
2. Mix flour, sugar, baking powder, salt, and baking soda in a large bowl.
3. Combine zest, juice, oil, and egg in a small bowl. Add to flour mixture, stirring until moist. Add milk and mix to combine. Fold in cherries and walnuts. Spray muffin cups with cooking spray.
4. Spoon batter into 12 muffin cups and sprinkle evenly with reserved sugar. Bake for 15 minutes or until muffins are golden brown. Let muffins cool and enjoy!
