Pumpkin Pancakes

Happy Sunday y’all!

I hope you had a fabulous, long weekend enjoying lots of food and time with friends! For our Thanksgiving dinner we didn’t have pumpkin pie but we did have apple pie.
Apple Pie

I know it’s practically a cardinal sin but we had our pumpkin in the morning with delicious pumpkin pancakes! These are some of the best pumpkin pancakes I’ve ever tasted and they are simple to make.
Pumpkin Pancakes

Pumpkin Pancakes
1 c All purpose flour
1 tsp baking powder
1/4 tsp baking soda
2 tbsp raw sugar, or granulated sugar
pinch of salt
dash of cinnamon
pinch of nutmeg
pinch of allspice
1 large egg
1/2 c canned pumpkin
1/2 c milk
3 tbsp unsalted butter, melted
1 tsp vanilla extract

1. In a large bowl, whisk together the dry ingredients. In a second bowl, whisk together the wet ingredients. Whisk the wet into the dry ingredients and mix until incorporated.
2. Preheat a griddle or non stick pan to medium heat. Spray with non stick spray. Pour a few tablespoons of batter to form a medium sized pancake. Cook until bubbles appear and flip. Remove to a plate and cover loosely with foil. Serve with butter, syrup and walnuts or pecans if you like! Enjoy!
