Red, White, and Blue Kabobs

Happy Wednesday!

I hope you are having a fabulous week and enjoying some sunshine! I enjoyed a 14 mile bike ride this morning on the Root River Parkway which is right beside our new apartment! I burned almost 600 calories on the ride, holy crap! But that means I can enjoy dessert later. ;)

Wisconsin went from 80 degrees Sunday to a chilly 50 degrees by Monday evening after a cold front rushed through and now we’re comfortably in the 70’s with blue skies! I made sure to soak up some rays after doing some work this afternoon! We’re hoping for decent weather on the Fourth of July and in anticipation of the Fourth I have a quick and easy appetizer or dessert for your cookout: Red, White and Blue Kabobs.

To make these kabobs all you need is: strawberries, blueberries, and angel food cake! I used store bought cake but feel free to make your own, since I’m still in a hotel I didn’t have access to an oven. Once you have all the ingredients wash the fruit and hull the strawberries; I cut my strawberries in half as well. Then cut the angel food cake into small cubes. When you have everything cut you are ready to skewer the kabobs! My skewers were thicker than the ordinary skewers, I used caramel apple skewers, so I ended up topping the kabobs with a blueberry. Next time I’ll use ordinary skewers so I can enjoy more blueberries. Here is the end result:
