Broccoli Beef and Carmelita Cookies

Happy Spring! I don’t know about you but it doesn’t look like spring here in Ohio. The high today is 33 and there’s talk of snow in the next 24-48 hours. But that won’t stop my training! Tonight is a 2.5 mile run outside and I’m ready to go with my tights, thermal layers, hat and gloves.

This week Mike and I tried two new recipes I’d like to share with you! The first is Iowa Girl’s Broccoli Beef. I swear everything Iowa Girl makes is golden. Ever since we tried the BBQ Cheddar Meatloaves I can’t stop trying her recipes. This dish was easy to make (Mike made it) and delicious. One of the benefits to working two different shifts is that Mike can make lunch and I’ll enjoy leftovers for dinner or I can make dinner and Mike will have leftovers for lunch. Now if only we could plan better for the week and not run out of food halfway through…but we’ll get there!

The second new recipe was Carmelita Cookies which are oatmeal cookies with a gooey center thanks to a Rollo. I made these Monday night and brought half of them to work Tuesday and they were gone by noon! I would make these cookies again and I would also try them without the rollos simply as oatmeal chocolate chip cookies. If you make them just be sure to follow the recipe exactly in regards to chilling the dough and freezing the rollos, good tip!
