Today’s high is 10 degrees…BRR!!! I guess the weather has decided to prepare me for Wisconsin weather… :( The wind chill this morning was -15 degrees and it warmed up to -7 degree wind chill around 10 am. Still freezing cold! I had decided last week that my dinner this week would be chili and I can’t tell you how happy I was to go home yesterday to my apartment smelling like chili and having dinner ready when I walked in the door!
Here is my favorite chili recipe which only contains one can of beans because I don’t like beans very much:
1 lb lean ground beef
Red onion (about half a large one)
2 green peppers or 1 red and 1 yellow pepper
2 cups of corn
1 14.5 oz can of diced tomatoes
1 can of chili beans
1 small can of tomato paste
First I sauted the ground meat with the red onions. I seasoned it with some salt, pepper, garlic powder and chili powder. Once it was no longer pink I drained the fat. I set the meat and onions aside for when I was ready to put them in the crockpot. I chopped all the peppers and set them aside too.
In the morning I added all of my ingredients to the crockpot. I actually thawed my frozen corn but this doesn’t have to be done before hand. It’ll work just fine frozen. I have a super awesome crockpot thanks to my boyfriend, he bought it for my birthday, and it’s this one here. I set it to Low for 4 hours and then it switched to Warm after that. My crock pot heats up really fast but usually I cook the chili for about 6 hours and it can be cooked on the stove for 5-6 hours.
When I came home I prepared some Jiffy cornbread muffins and after about 20 minutes I was ready to warm up with some delicious chili and cornbread! Yummmmm….
