A Bright, Snowy Idea

This weekend Mike and I decided to try a new pinterest idea we call: pancake bites! These are the greatest little muffin pancakes ever! I’m posting instructions for this because as Mike says I go crazy if I don’t have a recipe and I haven’t mastered the skill of creating things from scratch. The pin for pancake bites only said to use fully cooked sausage with your favorite pancake mix. 

Here’s how we made them: 

First we cooked 8 Bob Evans sausage patties until they were fully cooked and then cut them in half. 

Next we took 2 cups of Bisquick mix, 2 eggs, and one cup of milk and mixed together in a bowl. This mixture came straight from the Bisquick box for pancakes. To add some flavor we added a little brown sugar and vanilla, about only a teaspoon or so of each.

Then we sprayed a 12 cup muffin tin with non stick cooking spray. We added a tablespoon of the pancake mixture and then the piece of sausage. Over top of that we poured two more tablespoons of the pancake mixture so the sausage was completely covered.



We baked them at 350 degrees in the oven for 12-18 minutes until the edges were golden brown and the tops were cooked and no longer jiggly.


Lastly we plated them and added some maple syrup and blueberries. Yummy!!! This was one of our best ideas ever!!!
